Baby Broccoli Recipe from Cooking Greens Class

Baby Broccoli with Pine Nuts

    • Ingredients:
      • 1 bunch of organic broccolini or baby broccoli, chopped into 1 inch pieces
      • 5 garlic cloves, chopped or pressed
      • 2-4 Tbsp healthy oil of your choice (extra virgin olive, melted coconut, avocado)
      • ¼ cup water
      • ¼ cup pine nuts or more, to taste
    • Instructions:
      1. Over low-medium heat, drizzle enough oil to cover bottom of a saute pan or instant pot, add garlic, being careful not to burn it
      2. When garlic becomes aromatic, add broccolini. Saute until it becomes bright green and slightly softened
      3. Add about ¼ cup of water, immediately putting the lid on. Let the ingredients flash steam for 8-10 minutes until liquid is absorbed and greens are wilted
      4. Turn the burner off and toss in the pine nuts, stirring to allow them to toast slightly
